6 Inch Chef is a new addition to our range of culinary knives. Hand forged from 1084 High Carbon steel, If requested the blade may have a Hamon.
What is a Hamon you ask? A Hamon is a differential hardening line where by the use of a special medium the spine doesn’t harden but the edge does. This leaves the spine flexible but the edge maintains all the benefits of a durable lasting cutting tool. Many of the cheap kitchen knives you will find in stores measure quite low on the hardness scale often lower than 50HRC. this knife comes in at just over 60. What this means for the user is that it will maintain sharpness for longer. The softer blades are easier to sharpen but need to be sharpened often harder blades do not. When I say easier does not mean that this blade is hard to sharpen in fact in my experience with my own kitchen knives i need to sharpen them about every 3 to 4 months end just simply strop them in between.
The blade on the 6 Inch Chef is light and agile coming in at just 2.4mm at the ricasso ( just in front of the handle) and tapering to the tip and the edge,
The handle grips are Stabilised and dyed Quilted Maple and secured via 3 Black G10 pins.
This knife will serve you for many years and if cared for you could even pass it to your children.
